Yes the title of this post is supposed to make you laugh, and yes, believe it or not this has been one of my most requested posts since I started blogging. That and a meal plan, but first things first! Let’s start with the most important meal of the day, shall we? Breakfast- it can make or break your morning, and I’m not talking about leaving you hungry. I can’t tell you how many times rushing to get out the door has caused me to burn my eggs, crack eggs on the floor, and say “screw it” to eggs and grab a granola bar or even worse… nothing at all. Then there are those other mornings that #workfromhomelife reminds me that I can indeed whip up something delicious and nutritious in a matter of minutes- it just requires a little patience and a little rhythm, something I tend to lack early in the a.m., or when I’m running late.
So friends- the solution? Prep. Yeah I said it, and no you’re not going to want to do this Sunday afternoon, but will you thank me, and the gods, when you’re munching on a warm bacon and egg breakfast sammy on your way to work Wednesday morning? You betcha. Alright, let’s do thissss-
First things first- you’re going to want to shop for your ingredients. I will announce this now: You can purchase everything you need at Trader Joes. You can also purchase everything you need at Mariano’s, Whole Foods, Jewel, and yes, you can sub out/in anything your little heart desires. For prep purposes I went with a round Canadian bacon I found at Mariano’s and some breakfast sausage patties I snagged at Whole Foods for my two meat choices. If you do not eat meat- do not add it to your on-the-go breakfast sammy. Next up- you’re gonna need eggs. Five if you’re making these for weekdays, six if your’e filling a 1/2 muffin tin like I did. And finally you’re going to need “English muffins”. I actually used a paleo English muffin the first time I made these, which were good but I wanted something a little more substantial this time around. If you do not have an allergy- Trader Joes makes some bomb English muffins. If you do- you know the drill (insert GF English muffin of choice). The rest is up to you! Feelin’ some cheese? Salsa? Spinach? You can add anything you like- I’ll include when in the recipe below.
Step 1: Preheat oven to 375F and chop up any ingredients you’re using.
Step 2: Grease your muffin tin. I used 4th & Heart Ghee for extra flavor.
Step 3: Get crackin’. Feel free to top your eggs with your added ingredients, or put them on the bottom like I did with my Canadian bacon.

Step 4: Season- I mean, you already know I sprinkled the Trader Joe’s Everything Bagel Seasoning on all 6 of my eggs.
Step 5: Let eggs bake for about 12-15 mins. They should look cooked but maybe slightly gooey at the top. When done and while hot, use your tiny spatula* and scoop out your egg muffins. Place onto toasted English muffins. If you want to add a little extra ghee to the English muffin- I won’t judge.
Step 6: If you opted for sausage patties, assemble your sammy. Add anything else you like!
Step 7: If you are prepping for the week- wrap your sammy in either a damp paper towel (perfect for popping in the microwave for reheating and retaining moisture) and place in the fridge. If you’re freezing, go with parchment/foil.
